  • 1 cup pancake mix – Any brand works; this creates a light and crispy coating.
  • ½ cup milk – Whole milk or 2% for a smooth batter consistency.
  • 1 large egg – Lightly beaten to help bind the batter.
  • 2 cups vegetable oil – For deep frying; canola or peanut oil works well too.
  • ¼ cup powdered sugar – For dusting the fried marshmallows.
  • ¼ cup chocolate sauce – Optional, for drizzling or dipping.
  • ¼ cup caramel sauce – Another optional topping for extra indulgence.

Instructions

  • Start by preparing the batter. In a mixing bowl, whisk together pancake mix, milk, and a beaten egg until smooth. Adjust the consistency as needed—if it’s too thick, add a splash of milk; if it’s too thin, mix in a little more pancake mix.
  • Heat the oil in a deep pan or fryer, bringing it to 350°F (175°C). Using a thermometer helps maintain the perfect frying temperature, ensuring a crispy, golden coating.
  • To make dipping easier, stick a toothpick or skewer into each marshmallow. Dip the marshmallows into the batter, coating them completely. Let any excess batter drip off before frying.
  • Carefully place the coated marshmallows into the hot oil. Fry them for 20 to 30 seconds, turning occasionally with a slotted spoon, until the outside turns golden brown and crispy.
  • Once fried, remove the marshmallows from the oil and place them on a paper towel-lined plate to absorb any excess grease. While they’re still warm, dust them with powdered sugar and serve immediately with chocolate or caramel sauce for dipping.
